I have seen many similar recipes online. Oh, did I mention I haven't published a blog post since 2014 😱?
I looked in my pantry and used what I had available. I didn't use the ground flaxseed that said "best by" 03/2023 😜. Instead, I used some "fresher" wheat germ that I had. I had a great helper. My son Mateo. He was excited because I don't usually buy those candies from Trader Joe's. The ingredients I used are pictured (minus the coconut because I used all I had left and threw away the packaging).
I frequently purchase the Trader Joe's Organic Valencia peanut butter. I really like Truvani protein powder, however I was out of it and I saw the Orgain on Costco's website and decided to order it. I like it too. I've been making smoothies with milk of choice, frozen strawberries and blueberries, peanut butter and protein powder (I sometimes add spinach, banana, and/or cinnamon).
-2 cups oats
-1/4 cup shredded unsweetened coconut
-1/2 cup ground flaxseed OR wheat germ OR oatbran OR chia seeds (I used wheat germ in this batch)
-1 cup crispy rice cereal (I used puffed rice in this batch)
-1/2 cup honey (I feel like you could use maple syrup or brown rice syrup)
-1 cup creamy peanut butter OR other nut butter
-2 scoops Orgain Simple Plant Protein Powder, Creamy Vanilla flavor OR any protein powder of your choice
optional:
-1/2 cup of chocolate candies or chocolate chips (I used Trader Joe's bite-sized milk chocolate candies in this batch)
Instructions:
1) Combine all ingredients in a large mixing bowl.
2) Mix all ingredients together (I used a spoon, a spatula, and my hands)!
3) Scoop into bite-sized balls, or into muffin papers. I used a cookie scoop. I used one scoop on the baking sheet, and 2 scoops in the muffin papers.
4) Refrigerate about 1 hour until set.
Store in the refrigerator for 1 week. Can be stored in the freezer for up to 2 months.
